Rice is a staple food in many parts of Indian. And we do have much variety of rice available throughout India.  Paneer rice which popularly knows as paneer pulao is a quite easy and tasty rice variety, which can be accomplished with many Indian curries or simply raita. And coming to Paneer, it is something without which vegetarians can't live with. And when it gets combined with rice that's make an amazing healthy complete meal. Unlike other vegetable pulao, here the rice is separately cooked and then tossed on a big flat Tawa along with spices, vegetables. If you don't prefer to add veggies you are free to avoid them. This Paneer Pulao recipe is made in one pot which makes the dish more flavorful.



Tips:

  • Soak the rice for 20mins 
  • Before soaking makes sure you wash rice, never wash after washing because the rice gets softer and break if you wash after soaking.
  • Before making pulao masala make sure your rice is cooked and ready. But never cook the rice too much that makes it too sticky.
  • Adding veggies is your choice, or else even you can make plain rice with paneer alone.
  • While frying paneer don't fry too much because paneer will get harder  




Ingredients:


  • Paneer - 250gms 
  • Basmati Rice - 1.5cups 
  • Jeera - 1/2tsp 
  • Fennel seeds - 1/2tsp 
  • Cardamom - 2 
  • Cloves - 4-5 
  • Cinnamon - small stick 
  • Star Anise - 1 
  • Bay Leaves 
  • Onion - 2 medium 
  • Tomato - 2medium 
  • Ginger Garlic Paste 
  • Green Chillies 
  • Chilli powder - 1tsp +1/2tsp 
  • Turmeric Powder - 1/2tsp +1/2tsp 
  • Coriander Powder - 1tsp 
  • Veggies of your choice 
  • Coriander Leaves
  • Salt as required
  • Oil - 4tsp
  • Ghee - 2tsp




Procedure:


  • Cut paneer in small cubes
  • Marinate the paneer with a pinch of chilli powder, turmeric and salt
  • Shallow fry paneer, donot fry for too long and keep aside
  • In a kadai add 2tsp oil + 2tsp ghee
  • To that add 1/2tsp jeera and fennel seeds
  • add crushed whole spices
  • add bay leaves
  • saute it for a while
  • Add sliced onions
  • Add ginger garlic paste and green chillies
  • Saute it until raw smell goes off
  • Add diced tomatoes
  • cook until tomatoes are soft and smushy
  • When tomatoes are well cooked add chilli powder, turmeric powder, coriander powder
  • add required salt 
  • add some crumbled paneer (optional)
  • Mix well
  • Add cooked rice and gently  mix
  • Add coriander leaves and fried paneer cubes
  • gently mix do not break the rice
  • Serve with any curry of your choice or with raita
