Easy Pavakka thoran, Bitter gourd Thoran | kaipakka thoran-upperi | karela stir fry with coconut

 Here is another traditional Kerala recipe. I have the Kerala Special Bitter gourd recipe or should mention it as Bitter gourd white thoran recipe. You will definitely love this recipe, which differs from normal Kerala thoran recipes as here we are not using turmeric powder and instead of chilli powder we use green chillies. Bitter Gourd or Bitter Melon is known as Pavakka/Kaipakka in Malayalam and Karela in Hindi. In order to reduce the bitterness while preparing Bitter Gourd Thoran sometimes people squeeze out water from it but I'm not doing so since I love that bitterness. And while making some other recipes like bitter gourd fry or sabji we use curd or lemon to reduce bitterness.

Ingredients:



  • Bittergourd : 3, finely chopped
  • Onion finely chopped, same quantity as bitter gourd
  • Grated coconut: same quantity as bitter gourd
  • Green chillies :3
  • Cumin Powder: 1/2tsp
  • Mustard seeds
  • Oil
  • Salt
  • Dried red chilli
  • Curry leaves
  • Garlic - 3
  • Ginger - 1 inch


Procedure:
 

  • Discard the seeds and wash well.
  • Chop finely 
  • Take an equal amount of onion chopped
  • For making coconut masala mix blend together an equal amount of coconut, green chillies, garlic, ginger, cumin powder and curry leaves. Just make a coarse mixture do not make paste out of it.
  • In a kadai take some oil and add mustard seeds, dried red chillies and curry leaves and wait for mustard seeds to splutter.
  • Once splutters add chopped onion and bitter gourd along with needed required salt and cook well.
  • Once cooked add coconut masala mix and mix well
  • cook until the rawness of coconut and masalas are gone
  • serve with rice
