Kerala Special Egg Avial Recipe | Mutta Aviyal Recipe | Egg in Thick Coconut Paste - Kerala Style

 Kerala has got many varieties of recipes with coconut, and one among the best is Aviyal/Avial. Usually, we make aviyal by using mixed vegetables. But here we have a variety of aviyal recipe called Mutta aviyal. The basic coconut mix for both aviyal is the same with coconut, jeera, garlic, green chilli, curry leaves, and turmeric. Here in this recipe, I used the same coconut mixture along with eggs. If we want we can just simply add eggs alone or can add some veggies like drumstick, potato, carrots. Here in my recipe, I have only added drum-stick which is one of my favorite in aviyal recipe.

Ingredients:


  • Coconut grated - 1 cup
  • Drum stick - 2 medium-sized
  • Egg - 2
  • Jeera/Cumin - 1/4tsp
  • Garlic -3/4 pods
  • Turmeric Powder - 1/2tsp
  • Green Chillies - 2
  • Curry Leaves
  • Coconut Oil - 1tsp


Procedure:


  • Boil the eggs, deshell, and cut each hard-boiled egg into halves length-wise.
  • Boil drum-stick adding a pinch of salt.
  • In a blender, grind grated coconut, cumin seeds, green chilies, turmeric powder, curry leaves, garlic, and enough water to make a coarse paste.
  • Pour the ground mixture into a pan on which drumstick was already cooking
  • Now add the egg pieces and mix carefully. Take care not to break the eggs.
  • Cook on medium-low, stirring carefully occasionally till the gravy has reduced to a thick consistency
  • Turn off the flame. Drizzle coconut oil and some curry leaves over the curry and keep covered…Serve hot with rice.
