   Pulao is a very simple rice variety that any beginner can start with learning rice varieties.

  • Preparing pulao is a much simpler procedure that uses the absorption method. In other words, everything from rice to vegetables or meat is put inside one container at once and the ingredients absorb the water completely as it cooks.
  • Preparing a biryani on the hand is a much more complicated procedure and works on the draining method. It is cooked by layering partially boiled rice, fried in ghee and other partially cooked ingredients again fired in ghee (often a layer of fried onions placed on top) in an earthen pot or ‘handi’.


While making pulao there are some key points to keep in mind:



  • soak rice atleast for 20-30mins
  • wash rice before soaking, because if washed after soaking rice will break
  • water:rice ration is 2:1, that is if adding 1 cup rice add 2 cup water
  • donot cook vegetables for a long time
  • add strianed rice only once the water starts to boil
  • donot stir rice while cooking that leads to breaking of rice,instead swril the pot to mix
  • first cook rice in high temperature until rice grow bigger, later cook in medium temperature

Ingredients:


  • Basmati Rice - 1.5cups
  • cinnamon sticks - 2inch
  • cardamom - 3
  • star anise - 1 flower
  • cloves - 4
  • oil - 2tsp
  • cumin seeds- 1/2tsp
  • fennel seeds-1/2tsp
  • green chillies - 2
  • bay leaves
  • onion- 2medium
  • ginger garlic paste-2tsp
  • carrot
  • beans
  • potato
  • peas
  • salt


Procedure:


  • Wash rice before soaking them in water for 20-30mins
  • After soaking for 30mins drain then.
  • Crush the whole spices
  • In a kadai add 2tsp of oil
  • To that add cumin seeds,fennel seeds,whole spices, bay leaves and green chillies
  • Saute well
  • to that add onion and donot fry onion to brown.
  • When onion are soft add ginger garlic paste and again saute it
  • To it add veggies of your choice, Iam adding carrot, beans, potato.
  • Add salt and again saute it for a while until veggies are lightly soft
  • Add water (add water as double quantity as rice)
  • Add peas, and Allow water to boil
  • When starts to boil add drained rice
  • donot stir rice while cooking that leads to breaking of rice,instead swril the pot to mix
  • first cook rice in high temperature until rice grow bigger, later cook in medium temperature
  • while cooking in medium temperature you can close lid
  • in between swril the pot to mix so that rice donot get stick to bottom
  • When water completely evaporate you can see that rice is completely cooked
  • donot mix with spatula, when ready to serve never try to sccop out rice, it will lead to break rice. Intead slice rice using spatula and serve to a plate
