 Mangoes are one of my all-time favorite fruit. I'm from Kerala and we always have a lot of mangoes on seasons. Mostly we save raw mangoes in salt for pickles, even sun dry them for later use in the coming months. I even remember my mom use to collect the baby mangoes those are falling from mango trees due to wind and rain and preserving them in salt and bottling them in refrigerators and make pickles at times we need. 

Ripe mangoes were our favorite we just ate them as a whole and enjoyed them a lot. Sometimes we used to make jam, juices, pudding-like desserts with ripe mangoes. Once my aunt told me we can even make juices out of raw mangoes. I couldn't believe her because I wondered how can raw mango juice taste like, sour or sweet.  Thanks to her for sharing this recipe with me.

All we need are raw mangoes, sweeteners like sugar, and some food color which is completely optional. 

I really enjoyed this squash recipe which we can be even saved for more than a month without preservatives in the refrigerator. If using food preservatives this squash can be saved in refrigerators for a couple of months.  



                                                Try Passion Fruit Juice


Ingredients:


  • Raw mangoes
  • Sugar
  • Food Color


Procedures:


  • Peel the skin of mangoes and pressure cook them until they are soft and smushy
  • When cool down blend the mango pressure cooked mango pieces in a blender to a smooth texture
  • Strain the mango puree through a strainer to remove lumps if any 
  • Prepare sugar syrup using 1 cup sugar and 1 cup water.  Boil sugar and water together. No need to bring it to one string consistency. Just make a thicker syrup.
  • Combine mango pulp and sugar syrup together and mix well.
  • If needed add few drops of food color(optional I have added green food color)
  • Mix well.
  • Now your mango squash is ready to serve. You can store this squash for more than a month in the refrigerator, without preservatives.
  • If you wish you can even add preservatives and store them for a couple of months.
  • When serving mix 1 tablespoon of squash with water and ice cubes and enjoy. No need of adding sugar because squash contains sugar concentrated in it. Serve cold and enjoy!!!
