Poori Masala is a simple potato curry version especially enjoyed in the south-India. Most vegetarian hotels in south India have poori masala served and which is loved by all. I even personally like the Poori masala from vegetarian restaurants. The recipe is so simple with fewer ingredients but is mildly spiced with the aroma of cooked potatoes, green chilies, curry leaves, and coriander leaves. The curry doesn't use chili powder, coriander powder, or garam masala.
The curry can be served with chapati, poori, or even appam or crispy dosa. But my personal favorite is along with poori.
HOW TO MAKE SOFT CRISPY FLUFFY POORIS
Ingredients:- Oil - 2tsp
- mustard seeds - 1/2tsp
- cumin/jeera - 1/2tsp
- urad dal - 1/2tsp
- dried red chili - 2
- chana dal - 1/2tsp
- curry leaves
- asafetida - 1/4tsp
- onion - 2 medium
- green chilies - 3
- ginger garlic paste - 1tbsp
- turmeric - 3/4tsp
- tomato - 2 medium
- gram flour/besan - 1tsp
- potato - 3 medium, cooked and smashed
- coriander leaves
- sugar - a pinch
Some Notes:
- While cooking potatoes if adding salt make sure you adjust salt while sauteing onion
- My chilies were spicy, so added 3, if not, add more
- Instead of besan, you can use cornflour/ chickpea flour to thicken the masala. But I prefer besan(gramflour).
- You can add a tsp of coconut oil for extra flavor.
- Even you can add some chopped carrots also. But here I haven't added.
- When adding besan make sure to cook well until the raw smell is gone.
Procedure:
- Add 2tsp of oil
- When oil is hot add cumin seeds, mustard, urad dal, dried red chili, and chana dal
- When jeera splutters and dals got red and hing/asafetida to it
- Add curry leaves
- Add 2 onion sliced along with it add green chilies, and ginger-garlic paste and salt
- saute well until onion is soft
- add 2 tomatoes and cook until tomatoes are soft and smushy
- add turmeric powder and besan/gram flour and cook well until the raw smell of besan are gone
- Now add cooked potatoes and combine well
- add need water and adjust consistency
- add coriander leaves
- finally, add sugar and turn off flame
- enjoy with hot pooris
