The Broken Wheat/Cracked wheat is made by milling the whole wheat coarsely, which is then cleaned and husked and then processed in the required size. They do not undergo any refining process and so they are highly nutritious. When cooked they are a little grainy yet can be a part of many varieties of dishes.
The fiber content in Dalia helps in proper digestion and prevents constipation. It also improves the consistency of stool, which helps relieve constipation. Increases metabolism: This wholesome food is good for improving metabolism. It is a whole wheat product that enhances the metabolism rate.
Upma is always a great option if you are running out of time and need something easy but healthy. Upma can be made using Rava(semolina), Oats, Vermicelli, Broken wheat. Here I am making Broken Weat Upma. You can add veggies of your choice or can just keep it as simple with onion and grated coconut. But I personally prefer adding carrots, beans, peas and finally drizzle some ghee over it to get a nice aroma. Adding ghee gives your upma a nice aroma and enhances the taste. I learned this technique from my mom. She even uses milk if she is making broken wheat upma.
Broken Wheat Upma also known as Godhuma Rava Upma in Tamil Or Dalia Upma in Hindi. This upma variety is so healthy and packed with a lot of nutritional benefits that it can be served for weight loss as wells as for diabetes patients. The ginger and veggies added will take upma to a different level and the aroma of ghee will enhance its overall taste.

Vegetable Idiyappam / Leftover Idiyappam Upma
I usually prefer upma to be dry and non-sticky. For getting that consistency I skip the traditional method of adding water and then allowing it to absorb and cook. Instead, I prefer to add water gradually in intervals and then close and cook in medium-low flame. This method makes my upma non-sticky, dry and flavourful. And when coming to broken wheat I usually soak them in water for at least 2hrs so that I end up adding no water because it already contains water in it and if need I prefer adding water gradually at intervals.
Ingredients
- Broken Wheat - 1 cup
- ghee - 2tsp
- dried red chili -2
- mustard seeds - 1/2tsp
- urad dal - 1tsp
- chana dal - 1tsp
- curry leaves - few
- onion - 1/2
- green chilies -1
- ginger -1 inch, chopped finely
- Carrots
- Peas
- Grated Coconut - 1cup
- salt
- water
- milk -3tsp
Method:
- Soak Broken Wheat /cracked wheat for at least 2-3hrs. Wash well before soaking.
- To a Kadai add mustard seeds, dried red chili, urad dal, chana dal, and curry leaves. Wait until mustard seeds splutter and urad dal turns golden.
- Add onion and ginger and saute them until they are slightly soft.
- You can even add green chilies as you like.
- Add veggies of your choice, you can add carrots, peas, and beans. Quantity is up to you.
- When veggies are soft add soaked and drained broken wheat and saute it.
- Broken Wheat is already soaked in water for about 2hrs so no need to add water, just close and cook it in low-medium flame for a while. Stir in between to avoid getting stick to the bottom. And again repeat this step until you find the broken wheat is really soft and cooked.
- Never add too much water, just sprinkle little water if needed and combine well and then close and cook.
- When they are cooked add grated coconut and again combines well
- To enhance taste you can add 3tsp of milk and 2tsp of ghee and combine well
- Now your healthy vermicelli upma is ready to serve
Tips for Perfect Broken Wheat Upma:
- Wash broken wheat well and soak them for at least 2-3hrs
