When comes to vegetarians potato is one of their favorite. And moreover using potato we can make a wide variety of recipes including starters, curries, snacks and many more. Whenever coming for trying some new recipe, I always feel more comfortable if a potato is an ingredient, don't know exactly why?

And coming to curry variety, you can make dozens of variety curries using a potato. And that's why my recipe is a little special. I was always bored of trying normal potato curry with all those usual spices. Just wanted to give it a little tweak and make it a little different I tried making potato curry without adding red chili powder instead added green chilies.  

I loved adding a handful of coriander leaves to it and the final step of adding milk (coconut milk or normal milk) will give your curry a gooey texture, which I personally loved the most.

My family enjoys this curry so much with chapati, poori, dosa and what not. So let's jump on to the recipe.


Ingredients:



  • Potato - 2 medium
  • Onion - 2medium
  • Carrot - 1/4th cup
  • Peas - 1/4th cup
  • Green chilies - as per taste
  • Curry leaves
  • Mustard seeds - 1/4thtsp
  • Dried red chilies - 2
  • Oil -2 tsp
  • Turmeric Powder - 1/2tsp
  • Coriander powder -1/2tsp
  • Garam Masala - 3/4tsp
  • Coriander Leaves 
  • Milk / Coconut milk - 1/2cup
  • Salt - as required





Method:


  • Start by tempering- for tempering add 2 tsp of oil to kadai, to that add mustard seeds, curry leaves, dried red chilies. Wait for mustard seeds to splutter.
  • When splutters add sliced Onion, potato chopped in cubes, carrot, and peas.
  • Saute well until they are soft.
  • Add salt, close, and cook in medium flame 
  • Make sure to open and stir in between to avoid sticking to the bottom
  • When veggies are soft add spices.
  • Add turmeric powder, coriander powder, garam masala. Combine well and cook until the raw smell of spices is gone.

  • Cook for about 10mins and by this time potatoes will be half cooked.
  • Add warm water according to the consistency you need.
  • Allow it to cook for about 5mins until potatoes are completely cooked
  • When cooked smash a few potatoes cubes to make the gravy thicker
  • Now when gravy is thicker add few chopped coriander leaves and combine well
  • Finally, add coconut milk / normal milk 
  • After adding milk don't boil 
  • Serve hot and enjoy!!


Note:


  • If you wish you can add pepper powder to balance the taste(personally I don't prefer).
  • while adding normal milk, make sure to add fresh milk or else it can spoil your complete effort.
  • If you are adding normal milk can just dilute milk in water and add.
  • After adding milk/coconut milk never boil.
