Poha is widely used all over Indian for a variety of recipes. It is widely known in different names all over Indian like Aval, Poha, Chinre/ Chire, and Flattten rice/ beaten rice/ Rice flakes/ Pressed Rice in English.

During my childhood days, I remember my mom making "Aval nanachathu "(mixing poha, jaggery, grated coconut). 

Poha is one of the staple breakfast recipes. Generally beaten rice is cooked up with some of your favorite veggies, spiced up with masalas or egg, and then seasoned. Now Poha is widely used as breakfast and snacks and also as a strong ingredient for many recipes. 

Egg Poha is so easy to make loaded with proteins and veggies. It's a completely healthy meal. It's best for those who are looking for weight loss.

If you want a spicy version just add little turmeric, garam masala, and some green chilies. And your spicy poha egg upma is ready.



Ingredients


  • Poha - 1cup
  • Oil - 1tsp
  • mustard seeds - 1/2tsp
  • curry leaves
  • peanuts - few
  • ginger - 1/4tsp
  • onion- 1/2
  • carrot and peas - few
  • egg - 2
  • salt - as required



Procedure


  • To a pan add 1tsp of oil.
  • To that add mustard seeds, curry leaves
  • Wait for mustard to splutter
  • When splutters add peanuts and chopped ginger and roast to golden
  • When turned golden add onion and veggies.
  • Add the required amount of salt and saute until veggies are soft.
  • When veggies are soft add 2 eggs and scramble them.
  • Don't allow the eggs to get dry too much
  • Add Poha and mix well 
  • If poha seems to be dry add a dash of water or milk and mix well
  • Finally, garnish with coriander leaves
