Egg curry is one of my favorite with almost every dish. Kerala Egg Curry or Mutta Curry is a spicy curry made in traditional Kerala style. It can be made with or without coconut milk. Whenever I feel like making something quick along with chapati, dosa etc I do make my special Egg curry, which my family enjoys a lot.

This Egg curry is never rocket science and I'm sure every beginner can give this a try. Other than other varieties of egg curries Kerala Style egg curry is so simple with fewer ingredients and easy to make.

Ingredients :
 

  • hard-boiled eggs - 4
  • mustard seeds
  • dried red chili - 2
  • curry leaves
  • fennel seeds - 1/2tsp
  • chopped ginger - 1tsp
  • garlic - 4pods
  • pepper powder - 1/2tsp
  • green chilies - 2
  • onion- 2
  • turmeric powder-1/2tsp
  • chili powder - 1tsp
  • coriander powder -3/4tsp
  • garam masala - 1tsp
  • besan/garam flour - 1/2tsp
  • hot water
  • salt - as required
  • sugar -1/2tsp (optional)






Procedure:


  • Boil 4 egg for about 10-12mins (to get hard boil eggs)
  • First, we need to start with tempering, for that add 2tsp of oil to a Kadai. To that add mustard seeds,
    curry leaves, and dried red chilies. Wait for the mustard seeds to splutter. When done add fennel seeds, finely chopped ginger, garlic pods, pepper powder, and green chilies
  • Saute it for a while until the raw smell of ginger and garlic is gone.
  • When done add sliced onions. saute onions until they are soft and smushy and turns golden brown.
  • Add a little salt and give a quick mix. At this stage, if you prefer you can add a pinch of sugar, which will give a light caramelized taste to your gravy
  • To that add turmeric powder, chili powder, coriander powder, garam masala, and besan. Besan is added in restaurants to thicken the gravy. 
  • Before adding water cook the spices well so that the raw smell o all spices is gone specially besan(gram flour). Besan should be roasted well so that it does not leave its raw taste in your curry.
  • When done add  2 cups of hot water. Boil for another 4-5 mins and bring to your consistency.
  • Finally, add few curry leaves and 4 hard boil eggs(give a cut on egg if you wish).
  • boil for another 2mins and Kerala Egg curry is done




Notes:


  • To get a perfect hard-boiled egg: boil eggs for about 10-12mins, then take eggs from boiled water to ice cold water and leave it there for 40secs. Peel off the skin. And while boiling use can also add a pinch of salt in water.
  • Usually, egg curry from hotels in Kerala has a little sweet taste. So adding a pinch of sugar will help you to attain that caramelized taste,  even though this step is completely optional.
  • Adding besan/gram flour will thicken your gravy.
