Egg Bhurji (Spiced Indian Scrambled Eggs) | Anda Bhurji | Quick Egg Recipe







 Egg bhurji or Anda bhurji is an Indian version of scrambled eggs. They are made in under 20 minutes, but despite being the easiest egg recipe they are a flavourful, spicy version of scrambled egg. I would say this dish is a life savior for bachelors and busy moms. High on proteins, quick & easy to make! 

 Egg Bhurji is the spiced Indian version of scrambled eggs. It is also called Anda Bhurji. Anda means egg in Hindi. This recipe requires very minimum ingredients available in your kitchen and they become the best side dish for rice, chapati, etc.    

Egg Bhurji was a new dish for me until I tasted this delicious flavourful dish a few years back from my office cafeteria. I quickly became a fan of this dish and just wanted to make it myself. Thanks to google for the recipe. I love to have this dish along with chapati. While making egg bhurji make sure you can a handful of freshly chopped coriander leaves, to enhance all those flavors.   

Egg bhurji is a healthy dish since eggs are a good source of protein and other nutrients. One egg has only 75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids. The egg is a powerhouse of disease-fighting nutrients like lutein and zeaxanthin.  And nutritional values aside,  the egg is always our best friend in our kitchen whether it's breakfast, lunch, or dinner. While writing this I remember someone saying "Sunday ho ya Monday..Ros Khavoo Ande.."  

To add some twist I sometimes add a few more ingredients along with the usual recipe. I would love to add peas, corn, chopped carrots, beans, spring onion, or mushrooms. These veggies added might give an extra crunch to your bhurji. I highly recommend you try and experiment with these little twists. After all, cooking is an art and we are born artists right haha...

Ingredients:



   Ingredients to serve 3-4 person
  • Egg - 4
  • Onion - 1 cup finely chopped
  • Tomato - 1 cup finely chopped
  • oil - 1tsp
  • mustard 
  • ginger-garlic crushed - 1tsp
  • curryleaves - few
  • cilantro - a handfull
  • greenchilli - 2tsp
  • Turmeric powder - 1/4tsp
  • Chili Powder - 1/2tsp
  • Garam Masala - 1/2tsp 
  • Pepper Powder - 1/2tsp
  • Salt - 3/4tsp



Procedure:


  • Start with tempering for that add little oil in kadai, to that add mustard seeds
  • Add a 1tsp of crushed ginger garlic 
  • Add a cup of finely chopped onion and green chili
  • Add few curry leaves 
  • Add a cup of finely chopped tomatoes 
  • Add 3/4tsp of salt, 
  • Saute for a while until onion and tomatoes get softend
  • Add 1/4tsp of turmeric powder & 1/2tsp of chilli powder
  • Saute for a while until the rawness of the spices are gone
  • Gather all veggies to a side an to the other side add 4 eggs and scramble them 
  • Mix all together and wait to cook throughly
  • Finely its time to add 1/2tsp for garam masala & pepper powder and a handfull of chopped cilantro
  • Mix all together and your easy Egg Bhurji is done



Note:


  • Add more Pepper powder will enhance the taste
  • You can add any veggies of your choice to egg Bhurji which might give an extra crunch to your bhurji. I would love to add peas, corn, chopped carrots, beans, spring onion, or mushrooms. 
  • Always try to serve hot because serving hot taste better.
  • Add fresh cilantro for better result
